Details, cooking & ingredients

The absolute best part of the rib eye. If you have never tried a Spinalis - Rib Cap Steak, then you are in for a treat! They are extremely marbled, similar to a flank or tri-tip. However, these steaks do not need to be marinated. When grilled correctly, they are as tender as a filet mignon, but with all of the flavor of a rib eye. These steaks are very hard to find, and we are proud to offer them to our customers.

Cooking Instructions

There are many ways to cook these steaks, however there are a few things that you must do to ensure perfection. First, always bring the steak to room temperature before cooking. This can be done by setting the steaks on a plate on the counter uncovered for about 20-30 minutes. This allows the steak to coagulate, which basically means to allow the blood to spread out into the steak, which in turn will result in a much juicier steak. You can also add your favorite spices at this time. Another critical element to the process, is to allow the steak to rest for at least 5-10 minutes before serving. Again, this allows the steak to coagulate, and will result in a much juicier steak. This steak is definitely best eaten medium rare. Due to its consistency, rare seems to be tougher and more chewy. I know, I know, most grillers think that this is a sin of grilling, however we find that this is the best way. Give it a try and let us know how you like the Spinalis prepared.

I have many discussions with my clients on the best way, time, and temperature, to cook this steak on the grill. The best way that we have found is to place the steak on a preheated grill at 550-600 degrees for 3 1/2 to 5 minutes per side. The Spinalis will actually get bigger as you cook them. This cooking time and temperature results in a perfectly cooked medium rare steak. After you serve your family, friends, and neighbors your grilling masterpiece, sit back and enjoy the high praise and compliments of being called a true "grill master"!

Quick answers

What's in the pack?

2 pieces at 8 oz each — 16 oz (1 lb) total. As a guide, plan 6–8 oz per person for a steak or fish entrée.

How does it arrive?

Flash frozen and vacuum sealed, delivered to your door. Keep it in the freezer until you're ready — the seal locks in quality.

How do I thaw and cook it?

Thaw overnight in the fridge in the sealed pack, or submerge the sealed pack in cold water, changing the water every 30 minutes. Pat dry, season, and sear hot. Most chefs pull steak at 125–130°F for medium-rare (USDA recommends 145°F), then rest 5 minutes before slicing.
